We are delighted to offer an intimate experience for you and up to seven of your work colleagues, friends or family in our Cellar. Where better to experience Wine and Whisky tasting than in our Cellar which is full of history and wonderful tales.
In May 1922 the Londonderry family auctioned off the contents of Seaham Hall and left the property uninhabited. This provoked a rather unusual chapter in the house’s history and it became a secret bottling and distribution centre for Scotch whisky.
Knowing Seaham Hall was now completely unoccupied and had an extensive network of cellars, Harvey quickly spotted a commercial opportunity and, because of his family connections in Scotland began using the empty house to both store and bottle Spey whisky. In the dead of night he would smuggle the whisky down to Seaham Harbour and load it on ships bound for the Bahamas.
Our Cellar Master will hand select a variety whiskys for you and your party and guide you through their sensory delight. Here is a just select few of the Whiskys we can offer…
Hibiki Whisky – If not for the 12 and 17 year old versions existing, the Hibiki is the best blend around at the moment. It has so much to offer to all, whether you have tried whisky for the first time recent or are a seasoned drinker. This NAS Hibiki may have some younger malts than the 12 year old did, but I wouldn’t be surprised if it had older too. It is well balanced, friendly and accessible but never boring.
Nose – Lots of dried fruit notes including plum, raisin, apricot and perhaps a hint of fruit conserve. There is a pickled note in here, not unpleasantly so, but just a little acidity complement by a marmalade note, cacao and a very faint hint of peat.
Palette – Sweet wood notes, vanilla, honey develops into a warm spice rich apple and orange note before finishing with so oak woodiness and spiciness, some over-brewed tea and a faint passing note of peat.
For centuries, the cork had to be removed in order to enjoy a glass of wine. Seaham Hall now offers the Coravin system, which keeps the cork in the bottle while you explore the finest wines by the glass. The wine that remains in the bottle will continue to evolve naturally for your next visit to Seaham Hall.
This experience is sure to get your taste buds tingling and is great gift for the wine and whisky concierges among you, a fantastic team building exercise or a unique birthday celebration for a loved one.
